Medium red bell pepper, chopped

Medium yellow bell pepper, chopped

English cucumber, peeled and seeded, chopped

Red onion, chopped
2 cups
All natural tomato juice
1/4 cup
Extra virgin olive oil
1/4 cup
Cilantro, washed and chopped
1/4 cup
Lime juice
To taste
Kosher salt

Black pepper
To taste
Tabasco (optional)

Italian parsley, chopped

In a food processor or blender, add Carmelina ‘e… San Marzano® Italian Whole Peeled Tomatoes in Puree, bell peppers, cucumber, red onion, tomato juice, olive oil, cilantro and lime juice. Blend until smooth. Season to taste with salt and pepper, and tabasco sauce as desired. In a large storage container or pitcher, chill Gazpacho for at least 1 hour before serving so flavors have a chance to combine. Ladle Gazpacho into individual soup bowls. Garnish with parsley and Crème fraiche. Mangia bene!
