Green Beans with Tomatoes and Sliced Almonds

Green beans, washed, trimmed and cut in half
2 tablespoons
Extra virgin olive oil
1/2 each
Medium yellow onion, thinly sliced
2 bulbs
Shallots, thinly sliced
1 each
Garlic clove, thinly sliced
1, 28 ounce can
Carmelina 'e...San Marzano® Italian Chopped Tomatoes in Puree
To taste
Kosher salt
To taste
Black pepper
1/2 tablespoon
Fresh basil, torn into small pieces for garnish
1/4 cup
Freshly grated Parmesan cheese
Garnish
Sliced almonds

In a large pot with steamer insert, steam green beans for 5 minutes. Green beans should be slightly under-cooked, and crisp to the bite.  Remove from heat and set aside. While green beans are steaming, in a large sauté pan, heat oil over medium heat. Add onions, shallots, and garlic to the sauté pan, and cook over medium-low heat for 5 minutes; stirring occasionally.  Stir in the Carmelina ‘e…San Marzano® Italian Chopped Tomatoes in Puree and season to taste with salt and pepper. Continue to cook the tomato mixture over medium-low heat for an additional 5 minutes.  Add the green beans and basil to the tomato mixture, and continue to cook for an additional 5 minutes.  Beans should still have a slight crunch.  To serve, remove from heat and place Green Beans with Tomatoes  in a serving bowl.  Garnish with Parmesan cheese and sliced almonds. Tip: For some holiday indulgence, garnish dish with crispy pancetta or bacon as an addition to, or in place of the sliced almonds.
