Cannellini and Sweet Corn Salsa

Carmelina Brands® Italian Cannellini Beans, rinsed and drained
Fresh tomato, seeded, chopped
Red onion, finely chopped
Frozen corn kernels, thawed
Green onions, thinly sliced
Jalapeno, seeded and finely chopped
Fresh cilantro, chopped
Extra virgin olive oil
Fresh squeezed lime juice
- In a medium glass bowl, add Carmelina Brands® Italian Cannellini Beans, fresh tomato, avocado, red onion, corn kernels, green onions, jalapeño, cilantro, olive oil, lime juice, salt, black pepper and cumin. Stir to combine.
- Cover and chill Cannellini Beans and Sweet Corn Salsa for at least one hour before serving.
- Spoon the Cannellini Beans and Sweet Corn Salsa into an attractive serving dish. Serve salsa as an accompaniment to grilled chicken or fish, or as a refreshing side salad.
