Cannellini Beans and Mussels Neapolitan Style
In a large sauté pan with lid, heat oil over medium heat. Add garlic and chile and cook, stirring, until garlic is translucent but not browned, 2 to 3 minutes. Add mussels and wine. Cover and cook until mussels open, 3 to 5 minutes. (Discard any that do not open). Add Carmelina Brands® Italian Cannellini Beans, Carmelina ‘e…San Marzano® Italian Chopped Tomatoes in Puree, and vegetable broth, and simmer until liquid has been reduced by half, about 7 minutes. Season to taste with salt and pepper. Garnish with parsley. Serve immediately in warmed individual bowls with a side of crusty bread, or over your favorite pasta.
