Carmelina Brands® Italian Cannellini Beans, drained, liquid reserved
2 tablespoons
Olive oil
1 each
Egg
1/2 each
Onion, finely chopped
1 cup + garnish
Parmesan, finely grated
1 cup
Pecorino, finely grated
1/4 cup + garnish
Italian parsley
1/4 cup + more as needed
All-purpose flour
1 tablespoon + to taste
Salt, divided
To taste
Black pepper
For pan frying
Vegetable or Canola oil

Marinara Sauce (see Carmelina Brands recipe)

 In a food processor or blender, add Carmelina Brands® Italian Cannellini Beans, olive oil and egg. Puree until smooth. With a rubber spatula, spoon puree into a medium metal mixing bowl.  Fold in onion, Parmesan and Pecorino cheeses, parsley, flour, 1 tablespoon of salt, and pepper to taste. Mix until all ingredients are well incorporated. Mixture should be thick in consistency and just dry enough to roll into small round balls. Add additional flour to thicken or reserved bean liquid to thin as needed. In a large sauté pan, heat oil over medium high heat to about 350°F, enough to cover croquettes halfway in pan.  Carefully drop cannellini croquettes into hot oil, being careful so that oil does not splash.  Pan-fry croquettes until golden brown and crispy on both sides, turning over once.  Carefully remove croquettes from hot oil and let drain on paper towels.  Season croquettes with salt to taste, grated Parmesan cheese, and parsley. Drizzle with black truffle oil and serve with marinara dipping sauce if desired. Mangia bene!
