Mediterranean Butter Bean Salad
In a large sauté pan over medium heat, add 2 tablespoons of oil, and sauté garlic, red onions, yellow and red bell peppers, zucchini, Portabella mushrooms, and a pinch of fresh herbs for about 5 minutes. Set aside to cool. Once cooled, in a large bowl; toss the pre-cooked vegetable mixture with celery, green onions, Carmelina Brands® Italian Butter Beans and Kalamata olives. Toss thoroughly with remaining oil, balsamic vinegar, oregano, basil and remaining fresh herbs. Season to taste with salt and pepper. Carefully combine with Parmesan cheese and Feta cheese crumbles. Spoon salad in a serving platter. Mangia and enjoy!
