Carmelina Brands® Italian Lentils, rinsed and drained
1, 14.28 oz. can
Carmelina Brands® Italian Cannellini Beans, rinsed and drained
1, 14.28 oz. can
Carmelina Brands® Italian Borlotti (Cranberry) Beans, rinsed and drained

Large eggs
1/4 cup
Olive oil, divided
1 1/2 teaspoon
Kosher salt
1 teaspoon
Ground cumin
1/2 teaspoon
Cayenne pepper
2 cups
Panko bread crumbs
1/3 cup
Parmesan cheese, grated
1/4 cup
Shallots, finely chopped
1 each
Red bell pepper, deveined, seeded and finely chopped
1 each
Yellow bell pepper, deveined, seeded and finely chopped

Fresh cilantro, chopped

Lettuce, sliced tomatoes and onions (for burger toppings)

For best texture, use a meat grinder to grind the Carmelina Brands® Italian Lentils, Cannellini and Borlotti Beans together. If a meat grinder is not available, pulse beans in a food processor, or smash by hand using a potato masher. In a large bowl, whisk together eggs with 1 tablespoon of oil, salt, cumin and cayenne pepper. Mix in bread crumbs, Parmesan, shallots, bell peppers, cilantro and mashed bean mixture until just combined. Divide mixture into 8 equal portions, and with slightly oiled hands lightly pack into 1-inch thick round patties.  Heat 2 tablespoons of oil in a large non-stick skillet over medium heat.  Carefully lay 4 patties into the skillet and cook until well browned on each side; about 4 to 5 minutes per side.  Transfer burgers to a plate and tent with aluminum foil to keep warm. Repeat with remaining oil and burger patties. Place cooked Triple Bean Burgers on buns, and serve with your favorite toppings: sliced avocado, lettuce, tomatoes, red onions, pickles, etc. Don’t forget the ketchup and mustard!  Mangia bene!

Tips:  Uncooked burger patties can be easily frozen and saved for later.  Consider making your own “secret sauce” burger spread.  We mixed up ½ cup of ricotta cheese with 2 tablespoons of prepared pesto sauce for an awesome Mediterranean twist to accompany these bean burgers.
