An Excellent Chopped Salad
For the Dressing:
In a medium mixing bowl, add red wine vinegar, Dijon mustard, honey, garlic and oregano. In a thin steady stream, whisk in olive oil. Season with salt and pepper to taste.
For the Candied Bacon:
Preheat oven to 375°F. Line a sheet tray with foil and then add a cooling rack on top of the foil to elevate the bacon. Lay the bacon on the rack and sprinkle with 1/8 teaspoon of cayenne and 1/2 teaspoon of brown sugar per slice. Bake for about 20 minutes or until desired crispiness.
To Assemble the Salad:
To serve salad, add Carmelina Brands® Italian Garbanzos, pepperoncini, shredded carrot, romaine lettuce, radicchio, red onion, blue cheese crumbles, candied bacon, celery, cherry tomatoes into a large serving bowl. Drizzle on dressing and toss to combine thoroughly.
