In a large sauté pan, heat olive oil over medium heat. Add garlic and sauté until lightly brown. Add the chili pepper and zucchini, and toss well. Continue to sauté until mixture is golden brown, about 7 minutes. Stir in Carmelina ‘e…San Marzano® Italian Cherry Tomatoes in Puree, balsamic vinegar and mint. Continue to cook for 5 minutes until mixture is warmed through. Season to taste with salt and pepper. Remove vegetable mixture from heat. Serve hot or cold over sliced baguette. Mangia and enjoy!
